I may end up regretting that...

We had a medium-sized zucchini that needed to be used up before our trip to Idaho, so tonight I got the brilliant idea of frying it up just like fried green tomatoes. So I sliced it up, mixed some milk and egg, and some flour and salt and pepper, and heated up some oil. And I fried up those zucchini slices and boy were they good!

My original intention was to serve them with rice for dinner, offering some to the kids just to see if they might like it. I ate the first one done just to test it, and decided that I couldn't wait until the rice was done! I ate another, and another, and kept eating as they finished cooking.

The more I ate the more I thought to myself that there was no way the kids would want to even try these. They looked funny, the texture was sure to turn them off, and the flavor was far too grown up. I shouldn't even offer them any, because it was sure to go to waste. After all, only a grown up could fully appreciate how delicious these slices of fried heaven really were.

Thomas came up as I was eating and asked for some (read: he opened his mouth and looked at me expectantly). I reluctantly cut off a small piece and gave it to him, sure that he would screw up his face and walk away after tasting the strange new food. Nope. The little stinker came back for more! He ate about the equivalent of one slice.

I ate all the rest. The entire zucchini. All but one slice of that greasy, batter-fried deliciousness!

And something tells me that having consumed all that crispy greasiness (they really were quite greasy), I'm sure to regret it somehow later tonight, due to heartburn, stomach distress, burnt tongue, etc. But for now, I don't care. I enjoyed every single delectable bite.

Try deep frying them. They don't soak up as much grease. I dip mine in flour or Bisquick, lay the slices on a waxed paper covered cookie sheet, freeze and then use them as I want them.

I love fried zucchini :) yummy!
